GENERAL PURPOSE OF THE COURSE:

The purpose of this course is to cover important questions often raised concerning ethnic diets, eating disorders, nutrient supplements, phytochemicals, vegetarianism, diet for athletes, food safety, and fad diets.  The emphasis will be placed on the importance of understanding one’s food choices and changing one’s diet as needed.

Many perspectives in current nutrition research will be presented so that you can better understand current nutrition issues.  This will enable you to become sophisticated consumers of both nutrients and nutrition information.

COURSE OBJECTIVES:

The student:

-         appreciates the fact that nutrition, as a basic science, holds the key to the life processes that take place within the body.

-         will be able to separate nutritional myths from actualities.

-         will be able to analyze the credibility of sources of information on nutrition and health.

-         develops an understanding of the physical building materials of the body.

-         acquires a basic knowledge of the functioning units of the human body and the interrelationships that exist among the various organs and systems to insure the well being of the whole organism.

-         can discuss each of the key nutrients in terms of functions, food sources, and symptoms of deficiency.

-         realizes the need for good nutrition in relation to body functioning and is aware of the changes which occur in food before it can be used by the cells as well as its metabolism by the body

-         develops some basic concepts regarding the various processes upon which the growth and heat production of the body depend and from which the energy for the maintenance of vital functions is derived.

-         can design a personalized healthy meal plan that can be utilized daily.

-         develops a personal nutrition philosophy that relates to good health and a safe environment.

develops a lasting interest in current research and an attitude of discrimination in regards to published findings of these projects.
